Ume boshi are salted, dried, and pickled plums, which have been eaten in Japan for around 1,500 years. Many Japanese are nostalgic when it comes to ume boshi, which are very sour and salty, as common people many years ago could only afford a lunch box with nothing else than white steamed rice with an ume boshi in the middle, resembling the Japanese flag.
Today a lot of Japanese believe that ume boshi is good for the health and can help keep other foods fresh if stored together.
