Shio-koshou is used in countless dishes in Japan. It may seem a bit strange that Japanese salt and pepper should taste different from that found in Denmark, but this mixture of finely ground pepper and salt together with a bit of garlic is both easy to use and tastes absolutely fantastic. It's hard to imagine making karaage without it, for example.
