Ryorishu is a cooking alcohol, which is used just as we often use white wine in our food here. It's often possible to use white wine instead of ryorishu, but since the latter is made on a rice fermentation process just like sake, the taste is still different. So, if you want it authentic, ryorishu must be used for Japanese cooking, and Hinode makes one of the best.
