Dashi is absolutely essential to give traditional flavor in Japanese dishes. This dashi comes in a large sachet, so it's easy to take the amount needed. Hondashi means "real dashi" and it's a favorite for many Japanese. It's based on bonito, which is a kind of tuna, and it adds a particularly strong umami flavor to the dish.
