Shio-koshou is used in countless dishes in Japan. It may seem a bit strange that Japanese salt and pepper should taste different from what is found in Denmark, but this mixture of finely ground pepper and salt is both easy to use and tastes absolutely fantastic. It is hard to imagine making tonkatsu without this mixture, for example.
