Salt-marinated rice malt, a fermented specialty that is especially good to use to marinate meat, so that it becomes more tender and slightly sweeter in taste, and so that the meat's umami taste really comes out. Pork chops marinated in Shio Kouji turn out really good on both the pan and the barbecue, but it is also very useful for fish and chicken. It is also used in many traditional Japanese dishes.
