Hana no Mai, which means "Dance of the Flowers", is a smaller sake brewery in the Shizuoka Province in Central Japan, which started production in 1864. They use locally grown rice and water from the Akaishi mountains to produce a high and stable quality.

This sake is a "Junmai", which means no alcohol has been added during brewing, but only rice, water, yeast, and koji. At the same time it's a "Ginjo", which means that the rice have been polished to at least 60 % of the original size, and that brewing has been at low temperatures to produce fruity notes and a lighter bodied sake.

The aroma in the nose is light, with notes of melon and white flowers, while on the palate it's semi dry, round and soft, with sweet notes from the local Homare Fuji rice. It's fresh, as it's only been pasteurized once, and the freshness is preserved in the aftertaste, where some minerality is also experienced.

Can be enjoyed cooled or at room temperature.
