Hana no Mai, which means "Dance of the Flowers", is a smaller sake brewery in the Shizuoka Province in Central Japan, which started production in 1864. They use locally grown rice and water from the Akaishi mountains to produce a high and stable quality.
This sake is a "Nigori", which means it's coarsely filtered, leaving rice particles in the finished product, creating a milky white sake. At the same time it's "Genshu", so no water has been added after brewing, conserving the original alcohol strength. With it's 18.5 % it's therefore a strong sake. The style is "karakuchi", meaning dry, and it's a "Junmai", which means no alcohol has been added during brewing, but only rice, water, yeast, and koji.
The taste is fresh, strong, and lightly fruity, with notes in the nose of banana, melon, yoghurt, and steamed bread, while notes of rich umami, astringency, and light sweet notes come out on the palate, along with hints of minerality. It's wonderful on it's own, but is also a great companion for light and more flavorful dishes.
Can be enjoyed cooled, at room temperature, or lightly heated (not piping hot).
